When you open word, a list of recently open files display on left side of screen. Recently opened file also display when you try to open from 'File' menu 'open' option.

You can easily disable the list.
Click on 'File' menu option.
Now click on option. It'll open new window- word option.
In left pane select 'Advance', you'll see various options are available to set.
Under 'Display', make the option
'Show this number of Recent Documents' to 0.
You can set this in the range of 0-50.
After making it to 0. Now open the word document, you'll not see the list of recently open documents.
